Gem lettuce is a small and sweet romaine variety. It is usually used raw in salads. Wanting to change from
their normal use, I innovated and made this simple but really tasty side dish. If you don’t have Gem lettuce, using romaine hearts should be as good.
Ingredients
- Leaves of 2 gem lettuces, washed and patted dry
- A sprinkle of salt
- 2 or 3 tbsp of olive oil
- A generous sprinkle of garlic powder
- A pinch of cayenne pepper (optional)
- Black pepper and salt, to taste
Method
Step 1
Put the olive oil in a large frying pan, on medium high heat, then toss in the gem leaves with only a small sprinkle of salt. Sauté until the leaves have slightly wilted and have released some of their water. Remove the water with the help of a lid then add all the other ingredients including salt if needed. Sauté for one or 2 more minutes but don’t overcook! It’s much nicer when the leaves retain a little bit of crunchiness.
