Skate Fish Wings Sautéed with Herbs

Skate fish wings are delicious, meaty and easy to cook. Once cooked, they are flaky and have a nutty flavour like crab meat! It’s one of my husband’s favourite fish!
Ingredients
- 2 Skate wings cleaned and readied to eat by the fishmonger
- A drizzle of lemon juice to coat the fish before cooking
- About 3 tbsp of butter
- Two tbsp of balsamic vinegar
- A small handful of finely chopped fresh herbs such as: parsley, chervil, tarragon, thyme..…
- Salt & pepper, to taste
Method
Step 1
Just before cooking, drizzle some lemon juice on the skate wings, on both sides. After few minutes, wipe the wings then sprinkle them with some salt and pepper, to your taste.
Step 2
Put a large frying pan on a medium-high heat. Add the butter and let it colour a little bit before adding the fish. Fry the wings about 4 minutes on each side. Insert a toothpick to check if cooked. At this stage, you can serve the fish if you want it plain, with no herbs. Otherwise, at the last minute, add the herbs, the balsamic vinegar and cover with a lid.
Step 3
Put the wings on a platter and douse with the butter & herbs’ sauce. Serve warm!
