Lebanese Garlic Paste aka TOUM

This Lebanese garlic paste is mainly served with grilled chicken but nowadays it’s so popular that it accompanies many other Lebanese dishes. It’s addictively Good!
The easiest way to prepare it is to use the hand held blender and its container (see photo).
NB: I usually use only extra virgin olive oil in my cooking but for this paste it works better with a normal vegetable oil (avocado or any other of your choice). The taste of the EVOO is bitter when emulsified.
Ingredients
- About 5 garlic cloves
- About 12 cl of vegetable oil
- Juice of half lemon or to taste
- 1 egg white
- Salt, to taste
Method
Step 1
Put all the ingredients in the container then blend to combine and emulsify until you obtain a smooth and creamy paste. Taste and if needed add more salt or lemon juice. The amount obtained can be kept in a closed container in the refrigerator for at least one week.
