Raw Carrot Salad

It’s the 3rd week of confinement in the UK since the outbreak of the corona virus – Covid19!
One vegetable that is plentiful in the supermarkets is the carrot. We are in spring and the weather has warmed up so I thought a carrot salad would be perfect. By the way, grated carrot salad is a French recipe.
It’s a healthy, refreshing and easy to prepare salad. I have added a few ingredients of my own but they are optional.
Ingredients
- 3 or 4 large carrots, washed, peeled and grated
- 2 tbsp of cider vinegar or any other white vinegar
- 2 tbsp of honey
- 3 or 4 tbsp of olive oil
- Pepper & salt, to your taste
- A handful of raisins and walnuts (optional)
Method
Step 1
After washing and peeling, grate the carrots, using the larger holes on your grater. Put aside.
Step 2
Prepare the vinaigrette by whisking the vinegar with olive oil and honey. Season to your taste.
Step 3
Combine the vinaigrette with the grated carrots. Adjust the taste to your liking then place the salad on a platter. Refrigerate for a while then serve the carrots sprinkled with some walnuts and raisins, if using any.
