Raw Courgette or Zucchini Salad

Some research has shown that some veggies are healthier raw rather than cooked as they will have more vitamins and minerals.
Courgettes or zucchinis have a mild flavour with a slightly crisp texture which makes them suitable to be eaten raw in a salad. Furthermore they are packed full of nutrients, mainly vitamin C and potassium.
Courgettes are now in full bloom. So let me tell you how to prepare this healthy and fresh salad!
NB: you can add to it some cheese cubes such as feta or small balls of mozzarella.
Ingredients
- 1 whole courgette sliced finely with a mandolin
- A big handful of rocket leaves
- A smaller handful of mixed chopped herbs: chive, parsley, mint and dill
- Lemon juice, to taste + half tsp of lemon zest
- 2 gloves of garlic, mashed
- 2 or 3 tbsp of Olive oil
- Salt and pepper, to taste
- Optional: a dash of red chili powder
Method
Step 1
After slicing finely the courgettes with a mandolin or a food processor, put them in a bowl and salt them slightly. This will render some of their water. After about 15 minutes squeeze the courgette slices then put them in a salad bowl with the remaining ingredients. Toss well to combine, taste then adjust the seasoning if needed.
