While preparing dinner one day, I had this sudden idea of making a tomato salad with tarator* (tahini, lemon and garlic sauce) and herbs, instead of a classic sauce. It came out really good!
It was tanguy, flavoursome and a side dish that will go well with everything, especially with fish.
Tahini is now found in most U.K. supermarkets. It is healthy and a useful addition to vegetarian and vegan diets. It is also the main condiment used in hommos.
*Tarator is the Lebanese name of the tahini, lemon and garlic sauce.
Ingredients
- 3 medium size tomatoes, diced
- 2 spring onions, chopped
- A handful of fresh mint leaves, finely chopped
- 2 or 3 tbsp of tahini diluted in 2 tbsp of water (more or less)
- Juice of 1 lemon, or to taste
- 2 garlic cloves, mashed
- Pinch of cayenne pepper (optional)
- Salt, to taste
Method
Step 1
Wash then cut the tomatoes, mint and spring onions and put them in a salad bowl.
Step 2
In a small container, prepare the tarator by mixing the tahini with water, lemon juice, garlic and salt. The sauce must have a creamy consistency. If too liquid, add more tahini and if too thick add more water.
Step 3
When ready, pour the sauce over the salad, mix and serve.
